St. Patrick’s Day Celebrations

JohnMartin3 15St. Patrick’s Day — Seems like a perfect excuse for a paty.  Martin Lynch co-owner with John Clark of John Martin’s Restaurant and Irish Pub in Coral Gables gives us recipes and tips for our own St. Pat’s celebrations.  Bangers and Mash, Fish and Chips, Colcannon and, of course, Corned Beef,  Beef and Guiness Stew.  Let’s not leave out Irish Bread Pudding.  Food News and Views on WLRN NPR 91.3 FM, streamed live and archived at  Thursday 1-2 PM ET.

Shepherd’s Pie

4 lbs of ground sirloin

half qt water

1 1/2-large onions chopped

2 carrots, chopped

6 stalks celery chopped

2 TBS mixed herbs (dry or fresh

4 oz flour

6 oz tomato paste

8 oz green peas

salt and pepper to taste

3 opunds mashed potatoes

Jack and Cheddar cheese on top

Place beef in a heavy bottomed pot.  Add water and bring to a boil, reduce heat. Allow to simmer until fat is extracted from meat.  Skim off fat.  Add chopped vegetables and cook for 10  minutes.  ?Stir n flour, tomato paste and seasoning.  Cook 20 minutes.  Add peas and remove from heat.  allow to cool.  Fill pie bowls with beef to 3/4 full.  Spread a layer of mashed potatoes on top.  Cover with cheese and warm in 350 degree oven 20-30 minutes.
