St. Patrick’s Day Celebrations

Shepherd’s Pie

4 lbs of ground sirloin

half qt water

1 1/2-large onions chopped

2 carrots, chopped

6 stalks celery chopped

2 TBS mixed herbs (dry or fresh

4 oz flour

6 oz tomato paste

8 oz green peas

salt and pepper to taste

3 opunds mashed potatoes

Jack and Cheddar cheese on top

Place beef in a heavy bottomed pot.  Add water and bring to a boil, reduce heat. Allow to simmer until fat is extracted from meat.  Skim off fat.  Add chopped vegetables and cook for 10  minutes.  ?Stir n flour, tomato paste and seasoning.  Cook 20 minutes.  Add peas and remove from heat.  allow to cool.  Fill pie bowls with beef to 3/4 full.  Spread a layer of mashed potatoes on top.  Cover with cheese and warm in 350 degree oven 20-30 minutes.
